Ingredients
For the Steak Bites:
- 1 ½ lbs sirloin steak (or ribeye, New York strip), cut into 1-inch cubes
- 1 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp red pepper flakes (optional, for heat)
- 1 tbsp chopped fresh parsley (for garnish)

For the Zucchini Noodles:
- 3 medium zucchinis, spiralized into noodles
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- ¼ cup grated Parmesan cheese (optional, for topping)

Instructions
Step 1: Prepare the Zucchini Noodles
- Spiralize the zucchini into noodles and place them on a paper towel to absorb excess moisture. Lightly salt them and let them sit for 5–10 minutes.
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add 2 cloves of minced garlic and sauté for 30 seconds until fragrant.
- Add the zucchini noodles, season with salt, black pepper, and red pepper flakes (if used), and toss for 2-3 minutes until tender. Avoid overcooking to prevent sogginess.
- Remove from heat and set aside.
Step 2: Cook the Steak Bites
- Pat the steak cubes dry with a paper towel to ensure a perfect sear—season with salt, black pepper, and paprika.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Once hot, add the steak cubes in a single layer (cook in batches if necessary to avoid overcrowding).
- Sear for 2–3 minutes on one side until browned, then flip and cook for another 2 minutes.
- Reduce heat to medium-low, push the steak bites to one side of the pan, and add 2 tbsp butter. Stir in the minced garlic and red pepper flakes (if using). Cook for another minute, tossing the steak bites in the garlic butter sauce.
- Remove from heat and sprinkle with fresh parsley.
Step 3: Assemble & Serve
- Divide the zucchini noodles among serving plates.
- Top with the garlic butter steak bites, drizzling any remaining sauce over the top.
- Sprinkle with Parmesan cheese if desired.
- Serve immediately and enjoy!
Tips & Variations
- For extra flavor, marinate the steak cubes in olive oil, garlic, and herbs for 30 minutes before cooking.
- Make it spicy by adding more red pepper flakes or a dash of cayenne.
- For crispier zucchini noodles, sauté them quickly over high heat or serve them raw for extra crunch.
- Switch up the protein by using shrimp or chicken instead of steak.
