Instructions

Step 1: Prepare the Almond Flour Pasta

  1. In a mixing bowl, combine almond flour, psyllium husk powder, xanthan gum, and salt.
  2. Add eggs and olive oil, mixing until a dough forms.
  3. Roll the dough between two sheets of parchment paper until thin.
  4. Cut into fettuccine-style strips and let rest for 10 minutes.

Step 2: Cook the Chicken

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Season chicken slices with Italian seasoning, salt, and black pepper.
  3. Sauté chicken for 6-8 minutes until golden brown and cooked through. Remove from the skillet and set aside.

Step 3: Make the Alfredo Sauce

  1. In the same skillet, melt butter over medium heat and sauté garlic until fragrant.
  2. Pour in the heavy cream, stirring continuously.
  3. Add Parmesan cheese, salt, black pepper, and nutmeg (if using), stirring until smooth and creamy.
  4. Simmer for 3-4 minutes until the sauce thickens.

Step 4: Assemble the Dish

  1. Add the cooked almond flour pasta (or zucchini/shirataki noodles) to the Alfredo sauce, tossing to coat.
  2. Return the cooked chicken to the skillet and mix until evenly coated.
  3. Serve hot, garnished with extra Parmesan and fresh parsley.
